Fantastiske LCHF Sjokolade-Vanilje Cupcakes

Mmmmm… På lørdag lagde jeg deilige vanilje-cupcakes. Egentlig ikke helt med vilje men, de ble HELT fantastiske! Ikke bare smaker dem godt, men de gir kjempemasse god energi, og er faktisk ypperlig å spise ca en time før trening, litt som flapjack. Eller til frokost, som meg i dag. haha.

Grunnen til at det ble vanilje-cupcakes er fordi jeg glemte vanilje i bunnen, ironisk nok, så da ble det masse vanilje i toppingen istede.

Oppskriften er basert på den jeg har brukt tidligere, men nå la jeg til litt mandler for å få en søtere smak på bunnen, og den ble faktisk kjempegod! Også glemte jeg jo vanilje i bunnen, men det gjorde ingenting, hvertfall ikke når jeg hadde den i toppingen istede ;) Jeg gadd ikke ta på toppingen sånn vakkert som sist, men jeg bare klina den på, smæck, for jeg hadde dårlig tid. Men det ser jo så godt ut uansett!!

Det var forresten noen som sist lurte på om denne kunne fryses, og etter litt diskusjon fant vi ut at philadelphia ikke kan fryses, men det hadde jeg glemt, så jeg fryste de jeg, og jeg spiste en tint i dag og den smakte faktisk bedre enn i går, haha (kanskje fordi i går hadde jeg spist en halv bolle med røre først, så jeg hadde kanskje fåt min del sjokoladecupcakes allerede). Men JA man kan fryse dem :)

Denne gangen brukte jeg store amerikanske muffinsformer, så det ble 10 muffins og ikke 14 som med vanlige muffinsformer.

Ingredienser (ca 10 stk):

Bunn:

  • 50 g malte hasselnøtter
  • 50 g malte mandler
  • 100 g malte valnøtter
  • 100 g kokosmasse
  • 100 g smeltet smør
  • 100 g mørk sjokolade (86 %)
  • 1/2 dl sukrin
  • frøene fra en vaniljestang/vaniljeekstrakt (jeg brukte en halv vaniljestang + 5 dråper eksrakt)
  • 150 g kremost
  • 4 store egg (eller 5 små)
  • 1,5 toppet ts. Bakepulver

Topping:

  • 250 g kremost
  • 100 g smør
  • 0,5 dl sukrin
  • 1 ts vaniljepulver, evt frøene fra 2 vaniljestenger
  • noen dråper natreen (kan sløyfes)

Her er vaniljepulvere jeg brukte, kjempegodt og holder utrolig lenge, kjøpt på life til ca 187 kr (blir billigere enn vaniljestenger i lengden):

Fremgangsmåte:

Bunn:
Mal opp nøttene med kjøkkenmaskin eller stavmikser. Jeg har bare stavmikser så nøttene blir litt grove, men det er bare godt. Visp sammen egg, kremost og sukrin mens du smelter sjokolade og smør over lav varme. Bland alle ingredienser og smak til med sukrin.

Ha i muffinsformer og stek på 180 grader i 15-20 minutter.

Topping:
Smelt smør og miks det med kremost, sukrin og noen dråper natreen. Ha i vaniljepulver mens du rører og smak deg frem. Muffinsene må være avkjølt før du kan ta på toppingen. Dekorer cupcaksene som ønsket, og sett de ferdige muffinsene i kjøleskap om de ikke skal serveres med en gang, så stivner toppingen litt.
